Saucy Coconut-Turmeric Chicken Thighs

Our boneless skinless chicken thighs are the star of this easy dish, perfect for busy weeknight dinners or your weekly meal prep.

INGREDIENTS

  • 1 package Farmer Focus Boneless Skinless Chicken Thighs

  • Kosher salt and pepper (to taste)

  • 1 Tbsp coconut oil

  • 1 leek, sliced

  • 1 Tbsp grated ginger

  • 2 garlic cloves, minced

  • 1 tsp ground turmeric

  • 1/2 tsp red pepper flakes

  • 1 cup shredded carrot

  • 1 Fresno chile, seeded and thinly sliced

  • 1 can (13.5 oz) coconut milk

  • Juice of 1 lime

  • Fresh cilantro (for topping)


INSTRUCTIONS

  1. Season chicken thighs with salt and pepper to taste.
  2. Heat large frying pan or heavy bottom skillet and add coconut oil.
  3. Sear seasoned chicken thighs, remove seared chicken from pan.
  4. Sauté leeks, garlic, ginger, turmeric, and red pepper.
  5. Add shredded carrot and Fresno chile, cooking until just softened.
  6. Add coconut milk and return chicken to pan, simmer 20–25 min until chicken thighs reach an internal temperature of 165°F.
    Top with lime juice and fresh cilantro. Enjoy!
