Saucy Coconut-Turmeric Chicken Thighs

Kosher salt and pepper (to taste)

1 Tbsp coconut oil

1 leek, sliced

1 Tbsp grated ginger

2 garlic cloves, minced

1 tsp ground turmeric
-
1/2 tsp red pepper flakes

1 cup shredded carrot
-
1 Fresno chile, seeded and thinly sliced

1 can (13.5 oz) coconut milk
-
Juice of 1 lime
-
Fresh cilantro (for topping)

INSTRUCTIONS
- Season chicken thighs with salt and pepper to taste.
- Heat large frying pan or heavy bottom skillet and add coconut oil.
- Sear seasoned chicken thighs, remove seared chicken from pan.
- Sauté leeks, garlic, ginger, turmeric, and red pepper.
- Add shredded carrot and Fresno chile, cooking until just softened.
- Add coconut milk and return chicken to pan, simmer 20–25 min until chicken thighs reach an internal temperature of 165°F.
Top with lime juice and fresh cilantro. Enjoy!
