Our Green Goddess Grilled Chicken Thighs are the perfect pairing of fresh and smoky. Served with an herb-packed sauce that complements the charred and juicy chicken thighs this simple dish feels effortlessly summery.

1.5 lbs Farmer Focus Boneless Skinless Chicken Thighs

Kosher salt and freshly ground black pepper

1 tbsp olive oil
Green Goddess Sauce

1 cup plain Greek yogurt

1/2 cup packed fresh parsley

1/2 cup packed fresh basil
-
1/4 cup packed fresh tarragon
-
2 tbsp lemon juice
-
1 garlic clove, minced
-
1/4 cup olive oil

2 anchovy fillets (optional)

Salt and pepper to taste
Toppings

1/2 cup sugar snap peas, trimmed

4–5 watermelon or red radishes

1/4 cup fresh mint leaves

INSTRUCTIONS
- Season chicken thighs with olive oil and salt and pepper and grill until internal temperature reaches 165°F
- In food processor, blend ingredients for the Green Goddess sauce until smooth and color is a vibrant green
- Prepare toppings, blanch and shock snap peas, thinly slice radishes, and tear mint.
- Time to plate! We recommend using a wide platter, spoon some of the Green Goddess Sauce on the bottom, top with chicken, add remaining sauce and scatter peas, sliced radishes, and mint.
