Green Goddess Grilled Chicken Thighs

Our Green Goddess Grilled Chicken Thighs are the perfect pairing of fresh and smoky. Served with an herb-packed sauce that complements the charred and juicy chicken thighs this simple dish feels effortlessly summery.

INGREDIENTS

  • 1.5 lbs Farmer Focus Boneless Skinless Chicken Thighs

  • Kosher salt and freshly ground black pepper

  • 1 tbsp olive oil

Green Goddess Sauce

  • 1 cup plain Greek yogurt

  • 1/2 cup packed fresh parsley

  • 1/2 cup packed fresh basil

  • 1/4 cup packed fresh tarragon

  • 2 tbsp lemon juice

  • 1 garlic clove, minced

  • 1/4 cup olive oil

  • 2 anchovy fillets (optional)

  • Salt and pepper to taste

Toppings

  • 1/2 cup sugar snap peas, trimmed

  • 4–5 watermelon or red radishes

  • 1/4 cup fresh mint leaves


INSTRUCTIONS

  1. Season chicken thighs with olive oil and salt and pepper and grill until internal temperature reaches 165°F
  2. In food processor, blend ingredients for the Green Goddess sauce until smooth and color is a vibrant green
  3. Prepare toppings, blanch and shock snap peas, thinly slice radishes, and tear mint.
  4. Time to plate! We recommend using a wide platter, spoon some of the Green Goddess Sauce on the bottom, top with chicken, add remaining sauce and scatter peas, sliced radishes, and mint.
