Basil-Marinated Grilled Chicken Breasts with Peaches & Burrata

Serves: up to 2 | Cooking time: 20 minutes

Our basil marinated chicken breasts are the perfect combination of savory grilling and the freshness of summer. Paired with grilled peaches and fresh burrata this dinner is sure to be a hit.

INGREDIENTS

  • 1 package Farmer Focus Boneless Skinless Chicken Breast

  • 1/4 cup olive oil

  • 1/2 cup packed fresh basil

  • 1 garlic clove

  • Zest and juice of 1 lemon

  • Kosher salt and pepper (to taste)

  • 2-3 ripe peaches, halved and pitted

  • 1 ball (4 oz) fresh burrata

  • Torn basil leaves, for topping

  • Balsamic glaze, for topping


INSTRUCTIONS

  1. Blend basil, garlic, lemon (zest and juice), oil, and salt and pepper (to taste) together to make marinade.
  2. Combine marinade and chicken breasts, place into the refrigerator and let chicken marinate for 1–8 hrs.
  3. Grill chicken breasts 6–7 min per side until internal temperature reaches 165°F.
  4. Grill peaches 2–3 min until charred.
  5. Serve grilled chicken breasts with the grilled peaches and fresh burrata, top with torn basil leaves and balsamic glaze and enjoy!
