Whole Chicken en Cocotte with Gremolata

Whole Chicken en Cocotte with Gremolata is a beautiful slow-roasted centerpiece that will fill your table and home with irresistible aromas. Perfect for hosting and sharing, it brings everyone together over tender, flavorful chicken brightened with a fresh gremolata.

INGREDIENTS

  • 1 whole Farmer Focus chicken

  • Kosher Salt and Pepper

  • 2 tbsp olive oil

  • 1 fennel bulb, sliced

  • 6 garlic cloves, smashed

  • 1/2 cup white wine

  • 1 cup chicken broth

  • 2 cups red baby potatoes or chopped red cabbage

  • 1 orange, sliced

Gremolata

  • 1/4 cup parsley, chopped

  • 1 garlic clove, minced

  • Zest of 1 lemon

  • 1 tbsp green olive, finely chopped


INSTRUCTIONS

  1. Check chicken for giblets bag and remove, season with olive oil and salt and pepper
  2. Sear chicken in Dutch oven, remove chicken
  3. In Dutch oven sauté fennel and garlic, deglaze with white wine and chicken broth
  4. Add potatoes/cabbage, chicken and orange slices back to Dutch oven, Cover and roast at 350°F for 1.5–2 hours until internal temperature reaches 185°F
  5. While chicken is cooking, combine ingredients for the gremolata
  6. After chicken is cooked top with gremolata and blistered orange slices and enjoy!
