Sticky Gochujang Chicken Bowls

Serves: up to 4 | Cooking time: 30 minutes

High protein meets global flavor with these tasty Sticky Gochujang Chicken Bowls. Our boneless skinless chicken breasts are the star of this meal that is a great option for meal prep or quick weeknight meals.

INGREDIENTS

  • 4 Farmer Focus Chicken Breasts

  • Kosher salt and pepper

  • 2 cup cooked jasmine rice

Gochujang Glaze

  • 4 tbsp gochujang

  • 2 tbsp soy sauce

  • 2 tbsp rice vinegar

  • 2 tbsp honey

  • 2 garlic clove, minced

  • 2 tsp sesame oil

Slaw

  • 2 cup shredded purple cabbage

  • 1/2 cup kimchi, chopped

  • 2 scallions, thinly sliced

  • 2 tsp sesame seeds

  • 2 tbsp rice vinegar

  • 1 tsp sugar

  • Salt to taste


INSTRUCTIONS

  1. Preheat oven to 400°F
  2. Place chicken breasts in a baking dish and season with salt and pepper
  3. Combine glaze ingredients into a small saucepan and bring to a simmer
  4. Roast chicken breasts at 400°F for 20-25 minutes
  5. While chicken is cooking, or ahead of time, mix the ingredients for the slaw and place in the refrigerator
  6. Brush glaze on chicken breast and cook for the final 5 minutes, until internal temperature reaches 165°F
  7. Let the chicken rest and begin assembling bowls, layering cooked rice, chicken, and slaw. Top with scallions or sesame seeds as desired, enjoy!
