Sticky Gochujang Chicken Bowls

2 cup cooked jasmine rice
Gochujang Glaze

4 tbsp gochujang

2 tbsp soy sauce
-
2 tbsp rice vinegar
-
2 tbsp honey
-
2 garlic clove, minced
-
2 tsp sesame oil
Slaw
-
2 cup shredded purple cabbage
-
1/2 cup kimchi, chopped
-
2 scallions, thinly sliced
-
2 tsp sesame seeds
-
2 tbsp rice vinegar
-
1 tsp sugar
-
Salt to taste

INSTRUCTIONS
- Preheat oven to 400°F
- Place chicken breasts in a baking dish and season with salt and pepper
- Combine glaze ingredients into a small saucepan and bring to a simmer
- Roast chicken breasts at 400°F for 20-25 minutes
- While chicken is cooking, or ahead of time, mix the ingredients for the slaw and place in the refrigerator
- Brush glaze on chicken breast and cook for the final 5 minutes, until internal temperature reaches 165°F
- Let the chicken rest and begin assembling bowls, layering cooked rice, chicken, and slaw. Top with scallions or sesame seeds as desired, enjoy!
