Lemongrass-Ginger Marinade

3 tbsp lemongrass paste

2 tbsp grated ginger

3 garlic cloves, minced
-
3 tbsp fish sauce
-
2 tbsp brown sugar
-
3 tbsp soy sauce
-
2 tbsp neutral oil like canola
Nuoc Cham Dipping Sauce
-
2 tbsp fish sauce
-
2 tbsp lime juice
-
1 tbsp rice vinegar
-
1 tbsp sugar
-
1 garlic clove, minced
-
1 Thai chili, minced
Toppings

Thai basil leaves
-
Lime wedges
-
Sliced red chili (optional)

INSTRUCTIONS
- Combine marinade ingredients, add chicken wings and marinate in the refrigerator for 4-24 hours
- When ready to cook, preheat oven to 425°F
- Remove wings from marinade, place in a shallow baking dish and roast for 35-40 minutes, if you would like some extra char on the wings, you can place them under the broiler until charred. Wings are fully cooked when internal temperature reaches 185°F
- While wings are cooking combine ingredients for the Nuoc Cham Dipping Sauce
- Serve wings with dipping sauce and top with Thai basil, lime, or sliced red chili as desired
