Better For You Buffalo Chicken Bowls

INGREDIENTS

1.5 lbs Farmer Focus chicken tenders

1 tbsp olive oil

¾ tsp kosher salt

1 tsp garlic powder

½ tsp cumin

1 tsp smoked paprika

1 tsp dried parsley
Buffalo Sauce
-
¼ cup hot sauce (like Frank’s RedHot)

¼ cup low-fat plain Greek yogurt
-
1 tbsp honey
Sweet Potatoes
-
2 large sweet potatoes, peeled and cut into 1-inch chunks

2 tbsp olive oil
-
Salt and pepper to taste
Celery Slaw
-
1 cup thinly sliced celery
-
½ cup shredded carrots
-
¼ cup chopped shallot
-
¼ cup chopped green onion
-
1 tbsp apple cider vinegar
-
1 tbsp olive oil
-
Salt and pepper to taste
Dressing
-
½ cup plain Greek yogurt
-
¼ cup crumbled blue cheese
-
1 tbsp lemon juice
-
Salt and pepper to taste

INSTRUCTIONS
Caramelize the Sweet Potatoes
- Preheat oven to 425°F.
- Toss sweet potato chunks with olive oil, salt, and pepper. Spread on a sheet pan and roast for 25–30 minutes, flipping halfway.
- Once tender and caramelized, lightly smash each piece with a spatula and return to the oven for another 5 minutes to crisp the edges.
Make the Chicken Tenders
- Toss chicken tenders in olive oil, salt, garlic powder, cumin, smoked paprika, and parsley.
- Air-fry the seasoned chicken at 375°F for 10–12 minutes, flipping halfway, until golden and cooked through (internal temp 165°F).
- While the chicken cooks, whisk together hot sauce, yogurt, and honey to make the buffalo sauce.
- Toss the hot, cooked chicken tenders in the buffalo sauce until well-coated.
Make the Slaw & Dressing
- Combine celery, carrots, shallots and green onion in a bowl.
- Drizzle with vinegar and olive oil, season with salt and pepper, and toss to combine. Chill until ready to serve.
- In a small bowl, whisk together Greek yogurt, blue cheese, lemon juice, salt, and pepper.
Assemble the Bowls
- Spoon smashed sweet potatoes into each bowl.
- Top with buffalo chicken tenders.
- Add a generous scoop of celery slaw.
- Drizzle with optional blue cheese dressing or keep separate for meal prep.
