  • 1 Farmer Focus Whole Young Chicken, about 4 pounds, giblets removed

  • 1 bunch fresh poultry herbs (sage, rosemary, thyme)

  • Salt and pepper, to taste

  • 1 lemon, halved

  • 1/2 onion, quartered

  • 1 cup chicken stock

  • 4 tablespoons unsalted butter, room temperature

  • 2 tablespoons honey

  • 5 sprigs fresh thyme
