Old World Italian Meatballs

1lb Farmer Focus Ground Chicken

1⁄4 cup diced white onion
-
1⁄4 cup parmesan cheese, grated
-
1 Tbsp fresh parsley, chopped
-
2 Tbsp fresh garlic, minced
-
1 Tbsp dried basil
-
1⁄2 Tbsp dried oregano
-
2 tsp black pepper
-
1 tsp crushed red pepper
-
1 tsp cumin
-
2 eggs, whole
-
1⁄2 cup panko breadcrumbs
-
3 Tbsp extra virgin olive oil
-
1 jar tomato sauce

INSTRUCTIONS
1.Preheat oven to 350 ° F.
2. In a large bowl, add chicken, all herbs & spices, parmesan cheese, and onions. Mix to combine.
3. Add the eggs, bread crumbs, and olive oil. Mix until consistency holds together. Form the mixture into ping-pong-size balls and place them on a non-stick baking sheet.
4. Bake at 350 ° F for 12-15 minutes or until the internal temperature is 165 ° F.
5. In a saucepan, add tomato sauce and meatballs. Coat the meatballs and heat until the sauce is warm.
6. Top each serving with some parmesan and parsley.
