Instant Pot Butter Chicken

INGREDIENTS

  • 2 teaspoons avocado oil

  • 6 cloves garlic, minced

  • 2” piece fresh ginger, grated

  • ¼ cup tomato paste

  • 1 cup tomato puree

  • 1 tablespoon garam masala

  • 2 teaspoons turmeric

  • 1 teaspoon salt

  • ½ teaspoon cumin

  • 1 cinnamon stick (or 1/4 teaspoon ground cinnamon)

  • 1 cup chicken stock

  • 2 lbs. Farmer Focus Boneless and Skinless Organic Chicken Breasts

  • 1 cup long grain or jasmine rice, rinsed and drained

  • 1 cup water or broth

  • ¼ cup butter or ghee

  • ½ cup cashew cream (can also use heavy cream or coconut cream)

  • Cilantro, for garnish
