  • 2 teaspoons avocado oil

  • 1 onion, sliced thin

  • 3 cloves garlic

  • 1-½ cup chicken stock

  • ½ cup sun-dried tomato (packed in oil), drained and chopped roughly

  • 1/2 cup cashew cream

  • 2 cups spinach
